nice to have this at the funkatorium, on tap, listed at 5.8% abv on their menu there, so funky, not super sour, and not overly fruited, its lovely, pinkish reddish soft looking with light haze and not crazy fruit color saturation, fizzy popping white head, quick to settle back. high funk nose with modest acid, more brett than bacteria to me, nowhere near as sour as many of them in here, i like the more mild mixed type approach, still some tartness but the natural cherry tartness isnt blown away by the lactic element, its not sharp, and i think it lets a little more grain stick around than some of these do, both in flavor and importantly also in texture. neat mature brett profile here, animal and wild funk with obvious oak, nose and taste alike, the fruit is secondary, distinctive pie cherry tang, lightly medicinal with the funk, some tannins in play contributing to a real mouthwatering nose and juicy ripe interesting flavor profile, subtle raspberry and cranberry fruitiness too, red wine for sure with the wood, awesome brett brux type funk to this, iodine, mid pucker, whooshing carbonation, light oak and fruit sweetness at the end, fluffy feeling, not thin from being sour, each sip brings a little more than the last, and it sits nicely on the palate. they do some heavy heavy fruit beers like the morte series, this is far more delicate, and its very much a drinker. impressive overall quality, love the brett forward ferment and overall apparent maturity, glad i got to have one here! would love to snag a bottle, this is likely to age real well...

12 oz bottle marked on neck “BOTTLED 05/28/19 101-043 12:02:50”. Stored at home at 42 degrees and served at 58 degrees in a hand washed and dried Jester King snifter. Final temperature 59.1 degrees.
Appearance – 4.
First pour – Pink, clear.
Body – Coquelicot, hazy and opaque. When held to direct light, it penetrates.
Head – Average (Maximum 3.8 cm, aggressive center pour), pink, high density, fizzy with average retention, reducing to a three to five mm crown, (fed at multiple points by effervescence) and a partial cap of varying thickness.
Lacing – Just a few small islands of tiny bubbles clinging to the glass.
Aroma – 4.25 – Begins with slightly salty aroma like a gose and some Brettanomyces mixed aromas along with weak cherry. No malt, no hops.
Flavor – 4.5 – Begins slightly acidic with a distinct cherry aftertaste. No malt, no hops. No alcohol (5.3 % ABV, as marked on container) taste or aroma. No dimethylsulfide or diacetyl.
Palate – 4.25 – Medium, watery, lively carbonation.
Final impression and summation: 4.25 Very good! Cherry and Brettanomyces can produce very complimentary taste sensations without getting into the all-too-often cloying sweetness of the cherries or the sometimes-distasteful funk of the Brett species – the goal is balance.
