a funky sour beer with sauvignon blanc grapes, basically wine, incredible stuff on tap at the funkatorium, lucky to have encountered this one, it was among my favorites from our entire asheville trip, so fruit forward and amazing. the pour is clearish for the style, without much head or carbonation, wondering if its almost intentionally still or close to that to be even more wine-like, nice shine, some subtle leggy body to it, pretty in its own way in the little stemmed white wine glass they serve it in here. aroma and flavor are striking, incredibly obvious sauvignon blanc, not just white wine, but this grape in particular, amazing, very juicy, tart, and high toned, with notes of pear, green gooseberry, and watermelon rind, lush in that way, pithy and slightly underripe and tangy, with a soft new oak type woody richness adding body and interest, light citrus suggestion before the finish, some wild yeast character too, not just acid, its piquant and mouthwatering but its also interesting, just a bit more sour than sauvignon blanc itself generally is, but its close, and the grain side of this stays quite light in flavor, lots and lots of fruit in this i would think. long on the palate even though its not sweet, white florals and lemons as it warms some, a very high end oak profile to me, softens this, just bright and beautiful beer, even without carbonation, truly wine adjacent in the best way, unique fermentation character on this too among the wicked weeds stuff, at the very least it presents as transformed with all this fruit. delicious, could easily have had several glasses of this. its hard to imagine this place is owned by budweiser when you are there drinking, its so hands on and crafty and special, glad it still exists in this form! loved this beer!
