64oz growler fill from Green's PG, poured into a Conquest imperial pint glass.
A: Pours a deep black body, showing nary a tint of ruby when held to the light. Forms an inch of fluffy cocoa head that dissipates momentarily. An inviting pour.
S: Not too much going on here; a bit of roasted grain, some bitter baker's chocolate, and a vague earthiness that I guess is from the peppers. Nothing here betrays the depth of heat or sweetness that is to come. It's a pretty basic stout nose, with just a little extra something that is vague but intriguing.
T: A hint of sweetness up front segues to a growing heat as pepper oil slowly rolls across the mouth and throat. This heat in turn gives way to soft cocoa, which folds into a lingering pepper heat in the mouth and throat. While spicy, this is not overwhelming, and the flavors really do flow nicely through a progression mixing heat and sweet chocolate.
M: A medium body supports the flavors well, with mild carbonation and an oiliness on the tongue.
O: I'm not much of a chili/pepper beer guy, but Bipolar Highroller is a really nice example of the style. The cocoa nibs go a long way in taming the heat, and provide a soft sweetness as counterpart. Be sure to let this warm up a bit, as the chocolate comes through more as the beer nears room temperature.

Opaque black with a slight soapy biege head that left descent lace down glass.
Very even aroma with a hit of heat.
