Though admittedly blending the sour ales to achieve such sour and earthen charm, the Sour Blend '15 carries a procession across the tastebuds much like the unblended lambic of Brussels- earthy, refined, still and formidably regal overall.
Pale straw and carrying a bright haze, its goldenrod austere precedes a fragile froth that folds into the beer quickly. An earthen bouquet follows with dried citrus, saddle leather, cellar-type must, weathered oak, pepper and sour fruit. Its taste is fast-fleeting with wafer thin sweetness, soon parting ways for the brunt of sourness that washes over the middle palate.
Lemon, lime, crabapple and sea brine offer a fruity and saline character that's mouth-puckering sour with underpinnings of seemingly white wine vinegar and absolutely dry cider. Oak and pepper round out the earthy balance to taste as suggestions of burlap and balsa wood follows. Leathery and corkish qualities trail as the beer's final frame is one of pungent game, root and soil character that's just off of mushroom proportions.
Dry, sour and pleasantly astringent, the beer's palate-stripping acidity proves highly refreshing and very crisp. Its low-lying carbonation ensues that the full brunt of sourness seeps deeply into the soft tissues of the mouth and elevates its utmost jaw-tightening tartness. Its aftertaste is of leather and oak with citrus peels being the ribbon of flavor that ties the tastes together.

I have really enjoyed all of Wild Beer Co.'s beers. And this one was no exception. Had a 7 oz pour on tap. Great blend of funk and tartness with that distinctive earthiness I associate them with. I definitely recommend this beer.
