“Around 10 years ago, I walked into a Michelin starred restaurant to try and sell them some beer. They had a very small range of multi-national brands on their list and I wanted to introduce them to various different beer styles. I tried to excite them with stories of how a sour beer would work with one of their starters, and how the ESB-style beer I had would work with their lamb dish, but they weren’t remotely interested. “I don’t want beer bottles on my table and we pair wine with our food” was pretty much his answer.

“It was an encounter that stuck with me and became part of our mission at Wild Beer. We wanted to create beers that excited the palate, pair well with food, and look great on any table!

“To create a beer in a popular style that would be a good all-rounder is the sort of challenge to get us really excited. Over the last 8 years at Wild Beer we have tried to make versions of this beer, without ever quite getting the brief right, and therefore not getting the beer right. This time I think we have created the beer we have always been after; using the knowledge we have acquired to find a unique house blend of yeasts, creating the right levels of acidity, dryness, mouthfeel and flavour.'

thank goodness for this one, it really saved our experience here. enjoyed the wine barrel stout i guess, but things were pretty pedestrian, even a couple of really weak beer offerings, so i was thankful this was so solid, this is the quality i have known from them back in the states, and what i was expecting more of when we visited their bristol spot. just a bit of haze to this, a slight orange tone to an otherwise pale beer, and a great head on it from the tap, airy and belgian looking and snow white. the nose is bretty and its awesome, a brux type to me, funky and mature and real dry, some wine notes to it, almost a natural white wine vibe here with the new school dry hopping, melon and lime leaf and grapefruit hints there, nice. the flavor is hoppy all the way through and there is in fact some bitterness. its also got more than just brett to it, an sort of belgian ester ripping through with green pear character, and then a clean saison note too, more white wine, apple cider, and an interesting interplay with the hops, which id love to know what they are, seems southern hemisphere to me, modern, delicious. the beer is juicy and wet but the finish is effervescent and dry, its hoppy like ipa but funky like wild beer, which is exactly what i wanted from it. nicely done on this one, definitely one of the highlights of our visit!

Pours a crystal clear lemon jello coloured body with good white head
Aroma is pineapple glucose
Flavour is lemon tea

440ml can.
L: Pale orange with a light haze. One finger of off-white head and arcs of lacing.
S: Big nose of orange candy, Jaffa cake and pith.
T: Pineapple and candyfloss upfront with a softly bitter, slightly sour finish.
F: Light body but jammy mouthfeel and nicely dry.
O: An American-style IPA that is dry & fruity but also light & low ABV. Has some saison-type esters going on that lifts the flavour nicely. Very sessionable, very good.
