wanted to love this because it sounds so interesting, a blonde steam beer made especially hoppy with some cool processes they are working on, but the end result just isnt that good, and i was a bit let down by this, along with a range of other lackluster beers on our visit here, unexpectedly pedestrian in many cases. this isnt wild at all, really nothing cool about the ferment, seems like stressed lager yeast, sort of classically european and bready, but tired too, and without anything funky or unique about it, at least not in a good way, it seems sort of sloppy too, like the ferment doesnt really fit the beer, not trying to be too critical, but this doesnt hit in the ways it could. its pretty at least, radiantly clear blonde with an inch of lasting airy white head from the tap, high shine, minimal malt, looks awesome. the aroma is neat too, with a pretty bold and distinctive hop profile for the style, somewhat english, but i also get lemon, fresh grass, and maybe a little pop of green grape. the flavor is where is goes weird for me, mostly due to the yeast, but also due to some ut of the blue heaviness and mid palate sugar, it goes from almost delicate to weighty pretty quick, perhaps an attempt to balance what ends up being quite a lot of hops, but it hits at the wrong time, so this seems disjointed, bold but not cohesive, and it seems less than fully fresh to me, which it shouldnt at their pub. clever idea, i hope they continue to pursue it, but this is a few tweaks away from really teaching us anything about hops or being all that desirable to drink on. i was a little bit hoping every beer on tap in here would be wild in terms of yeast, but that was not the case...
