collaboration with bin day, who i know nothing about, a lightly malted pale ale done with apple juice, pretty clever stuff, they even employ the hot rock method, rather unique, and the beer is cool, its just weird, and like a lot of them we had in here, i think i like the idea better than the execution. its a shame because so much of this rules, the little bit of caramelization in the grain base but the way its still so light, pale, and dry, the apples, how fresh they are, how some tartness from the skins remain, and how real they stay in here, but the ferment is sort of whack, which was so unexpected in a place i came into loving for their bretty and wild beers, but it just seems messy, stressed, oddly yeasty without being unique and refined, and to me its the element i expected the most from but the one i liked the least, like even a simple ale yeast to dry here would make this way better, whatever house strain or whatever they are using here didnt pan out, sometimes less it more, and i thought that in a bunch of their stuff we tried. the apples give this a cider vibe, a little fruity funk is cool too, and the grain is distinctive to me, even though the color and texture are very light. good carbonation here too, long apple finish, summery and autumnal at the same time. apparently designed to pair with a sausage roll, and i can definitely see that, so success there, but this is so close to being amazing, just clean up the ferment a little, or actually brett it out properly, and they have a winner. the hot rocks thing is more than a novelty here too, i feel like it textures this beer uniquely. close to great, but you have to know the story to appreciate it, like it doesnt translate like it should from the liquid alone...
