this beer is awesome, a really cool blend, and not knowing what the individual threads are allows me to just enjoy the new whole. there is a lot of wood on this one, a seeming mix of new fresh wet wood thats bright and sort of vanilla forward, and then a more mature, not quite rotting, but earthy and musty oak profile too that seems to be harboring all the funk, really cool duality here, very unique. blonde beer, lighter looking than expected, and the mature funk of some real long aged wild beer is immediately evident in the nose, fruity brett and the oak, a sturdy and distinctive white wine and white grape quality with some tannins and some tart sweetness. the grain is simple but rustic, a fluffy wheaty thing it seems, great with the earthy wood and this bright brett. super complex and mature as they go, subtle tea and even ginger root to finish, lingering spice and brett, gorgeous. awesome carbonation and some nice body, this is the kind of wild beer i like to drink, nuanced and layered and amazing. breakside does wild beer so so well in my experience, i wish more of it came around!
