Sour Beer with Pineapple and Chinese Tea: Brewed with Jing-A Brewing in Beijing. We brewed a simple base beer with barley and wheat, soured it before fermentation, and then added an oolong tea from Townshend's called Iron Goddess of Mercy as well as pineapple puree. The combination of flavors is meant to land somewhere between a delicate dessert and a contemporary kombucha-type tonic. Very light, flavorful, and sour and refreshing!

i thought this was great, a really creative combination of ingredients and brewing innovation that i have not seen before now. the pineapple and the tea together are really cool and different, and the souring isnt too much, just clean and fresh and good. its tart but not insane, and the lemon flavor to it works so well with both the herbal tea and the tropical pineapple, it makes me wonder why this isnt a more common pairing of additives for a beer like this. the tea oddly has very little bitterness but notes of budding shrub, wet stick, and really old dried culinary herbs, all as flattering and positive attributes. meanwhile the pineapple is like a baked dessert from some post world war two budget cookbook, canned all the way, sweet at the right moment, and kind of simple. the sourness is the curious part but also the unifying element. carbonation is standard for this sort of thing, the mouthfeel has some texture, almost a whipped vibe to it which i dig, but maybe could be a little drier. overall a thoughtful combination of ingredients and something thats mod and classic at the same time. breakside can do no wrong, and its fun to taste something at their cutting edge. always such high attention to detail with these guys!
