Wood-Aged Sour Beer: Quiescence means a state of stability, inactivity, or prelude. We think it's an apt descriptor for the quiet, languid beginnings of mixed culture fermentations. It also applies neatly to the long aging periods these beers require and the unique homeostasis that our house cultures achieve after blending. This beer is a blend of 13 casks of wood-aged sour beer brewed in November 2017 and housed for a year in Archery Summit Pinot Noir barrels. Enjoy notes of sandalwood, light stonefruit, and mild oak in this balanced mixed culture sour.
