This beer is the result of more than 16 months of our love and attention. With the help of our koelschip, we let the ice-cold night air of the Waal river fertilize the fresh wort with floating yeast and bacteria particles.
This miracle of spontaneous fermentation was allowed to rest for 12 months in French oak barrels.
Before filling, we dry-hopped the beer with Ekuanot for a month, resulting in a fruity and wine-like taste.

Golden clear body with fine bubbles raising to build a thin but nicely structured cream colored head
Smell is clearly funky reminiscent of leather, tobacco and fruits like apple flesh or strawberries.
Taste is wonderful tart not sour with a lot of fruitiness. Strawberries, blackberry but best call is probably elderberries. Aftertaste is oaky with some lingering astringency is lingering.
Body is full with a great fine refreshing carbonation
As difficult it is to categorize, dry-hopped Lambic, American spirit wild ale, modern spontanous fermented beer, as easy it is to love this beer. Nicely complex and drinkable at the same time
