This San Marco Sour is a different take on our year round sour blonde ale. Rather than being kettle soured and fermented with 100% Brettanomyces, this batch is brewed clean, then aged in our wooden foeder with a blend of different Brettanomyces strains, bacteria, and various wild yeast.
With strawberry, vanilla, and graham cracker.

Nice fizzy head production, quickly fading to nothing; unsurprising for the style. Body shows some liveliness, and is a crystal clear, red-struck amber.
Nose is wonderfully sour and oaky, with musty, dusty oak, vinegar, and flowers. Strawberry manages to poke its head through for quick breaths. No hint of vanilla or graham cracker.
Strawberry is much more noticeable on the palate, and brings both a berry tartness and sweetness (no doubt amplified by the vanilla, which is otherwise barely noticeable). Graham cracker comes on strong on the second half and lasts through the finish. More sour than funk, it's nonetheless fairly balanced.
