I had a small sample of this at the brewery, as I was curious about whether the Koji was used to sour or funkify the beer, and had to get a full pour shortly after!
Appearance is hazy gold-yellow with a creamy white head leaving cheetah spot lace.
Smell is guava, strawberry, and orange rind.
Taste is smooth and sweetly light on bitterness with bubblegum, guava, orange and grapefruit.
Light to medium bodied with a pillowy froth and a semi-dry finish.
To be clear, the Koji does not sour or funk up the beer. It's a clean, smooth, unique APA with a unique hop and yeast combination that does not give the typical notes of a hoppy ale.
