A: Poured into a (what I believe is) a fluted tulip glass from the brewery itself. The brew pours as a darkened yellow and sits in the glass opaque yellow-dandelion color. It develops a large fluffy white head that quickly fades, leaving hardly any lacing.
S: The smell is very crisp and light, with a scent of citrus (from the limes it is brewed with), tartness from the yeast, and some wheat accents. The beer is a smoked beer, but to my untrained self this is not noticed in the smell.
T: The flavor is very mellow with the wheat and yeast taking the foreground of the flavor. The intensity of the wheat and yeast seems to be downplayed, as compared to other wits I've tasted; I can only assume this comes from the smoked. This dissolves into a sweet tartness that seems to be citrus-y in nature, arising from the limes with which it is brewed.
M: The brew is carbonated well, enough that it sparkles in your mouth. The feel is light, making it easy to enjoy. This has an interesting presence afterwards during which the flavors meld together to create a very citrusy flavor to linger in the back of the throat.
O: The Mexican is described as a smoked wit with limes. What I truly like about it is its mellow but complex flavor and drinkability. The flavors it did create come together well and create a fine beverage. This is the first wit I've tried analytically and I would definitely be willing to try another from this brewer.
