Very interesting beer. Reminds me immediately of thanksgiving stuffing.

Basically, a pale ale with rosemary and thyme spices that really make their presence known. The aroma from the spices is very impressive, yet somehow does not overpower the beer, or push it out of balance. You can't really comprehend the flavors until you try it.

Pretty cool beer.

All the Trimmings – 22 oz. bottle – poured into a 12 oz. Samuel Smith nonic glass after being in the fridge for about an hour.

More of a Spiced Ale, but the option wasn't there that I saw, so I went with an APA.

A: Mildly hazy, yet still fairly light on color. Light copper, light orange. Like magic hour in a Terrence Malick movie, in other words, in the sliver of orange through the clouds. Nice combination of both raindrop lacing and some layered sheets. They stick with every pour, and each one subsequently looks better than the last.

S: You can say honey-soaked flowers, with thyme and rosemary as garnish. And enough hop character to make it nothing too terribly sweet. A perfume to be certain, but not too terribly out of control? Yes. Along with some pepper and other spices you'll probably have in some of your Thanksgiving dinner, but again, they're extremely balanced. There aren’t a million aromas coming off this brew, but what you get is powerful, nuanced, balanced, and wonderful.

T: I’m getting honey at first, thanks to the honey malt, which makes the sweetness both balanced and in control. The rosemary and thyme are present, and they definitely make their presence known, but it works here—you’re not drowning in a pool of floral chaos. Some orange and citrus flavors balance it out, which is good for cutting through the food you may or may not be eating with it. Long and lingering finish of honey and spices and pepper and back-end floral hops. This can go with everything you have on the table at Thanksgiving—from the turkey to the cranberry sauce to the mashed potatoes. And your guests will thank you for it.

M: Medium-bodied, creamy but not cloying, and near-perfect.

D: What else would you rather drink around the holidays, especially Thanksgiving? I imagine this would go well with everything at the table—including the staples of turkey, mash, and whatever vegetable you choose. It's available in a few days, as I write this, from the brewery, so get some this year while you can. Great stuff.
