Finally, an actual Berliner Weisse, and not fruit slop in a can. No kettle souring, instead a mixed lacto/brett culture, which adds a lot of refined depth and texture.
Pastel yellow with a fluffy head of finely textured foam and spotty lace. Aroma is lemony, chardonnay, slightly dusty.
Sourdough, tart lemon, juicy white grape flavors. Finishes bone dry. Champagne carbonation with a fine texture.
Overall this is really nuanced and well done. Nice use of a mixed culture that gives it a unique twist.
