these earthy foraged wild beers scratch is putting out are blowing my mind, so excited to have some limited access in colorado, this was on tap at finns manor, who somehow always ends up with the headiest beers around despite the place not getting a lot of chatter in local beer circles, always something worthwhile on tap here. this is really pale in color, stained just a little orange maybe from the fresh turmeric, it must be, i know when i cut up fresh turmeric my fingers are orange for days! it must have an impact on the shade of this. the aroma is lively, lemon lime soda, ginger, wildflowers, and funky tartness, similar yeast profile to their other sours, a repeatable house culture by now i would think. its hard to appreciate mushroom in the aroma. the flavor is also excellent, i get a lot of citrus here, but i dont know where its coming from, as there are no hops in this beer. i like the nutty, spicy turmeric, its very distinct here, earthy but also very fresh at the same time. the mushrooms again seem faint in comparison, but i do get their fleshy earthy distinctiveness very lightly. the beer drinks easy because of the moderate acidity and the insanely high carbonation, its refreshing for how complex it is. i like these flavors together, but part of me wishes both the special ingredients were a little more robust in here. still, this is wicked beer, i dont know of another operation doing anything near this innovative...
