Sour beer brewed with ash leaves from Brasserie du Brabant's farm and mashed with cedar in a puncheon at Scratch before being boiled in their copper kettle. Fermented with Scratch's wild house mixed culture. Beautiful floral aromas and grapefruit-like finish.

Aged 1 year. Murky pale bronze body with a white cap. Juniper, earth. and sour oak nose. Taste is a wonderful balance of ashy earth juniper and sour oak with accents of pine, mulled red wine, grapefruit with some pith, and acidic tannins to finish. Feel is sour and lightly acidic, though I think aged helped this, has some of the adjunct texture peaking through, oak shapes most though. A weird yet delicious beer

Hazed orange with a thin layer of foam and thin surface skim.
Huge juicy grapefruit with a sweet spruce undercurrent. Really unique.
Puckering sourness, intensely fruity with lightly woody cedar lingering in the finish. Great clean acidity, juicy up front with a super dry woody aftertaste. Intensely fruity, the acidity really pops and is well balanced by the cedar. Really nice stuff.
