another totally unique and incredible beer from these guys, this one a wood fired darker ale with cedar branches and berries added right in, its woodsy and autumnal and incredibly flavorful and unique, nobody else that i am aware of out there is making beer like this, one of a kind. medium brownish red in color and a little thin looking from the tap, mostly clear, small white head on top. the aroma is very spruce and juniper to me, straight aromatic pine, with even a sappy sort of sweetness to it, really firesty and natural, but quite robust. faint smoke with the sweet is nice too, traces of the wood fire perhaps. the branches add so much to this, definite pine sap sort of sweetness, a pungent herbaceous pine thing, the cedar wood is so obvious not not like a closet here, its more earthy than that, not quite as woody, but long lasting and fresh to me. some decent malt structure here, a little roast and a little caramelized sweetness like molasses or something, both fantastic with the cedar. traces of rustic yeast, rosemary, and some other neat botanical element, gin-like but malty, very very tasty and a beer i would have had several pours of when we visited if they didnt have so darn many interesting beers i felt compelled to try! we all loved this one!
