a wild beer brewed without hops and with local paw paws, a strange tropical fruit that grows here. to me this one was a little bit sharply acidic, not as well refined on the fermentation side of things as their best beers, but still super unique with the paw paw and the wild yeast together, to me it sort of smells and tastes like a lemon lime soda, tropical and zesty and bright, with white wine sort of acidity from the bacterial component and a very simple and light grain base. i think this could use some time in wood to mellow out a bit, its a bit bright on the sourness, and not real complex their either, less of the bretty funk than i get in a lot of their others. i do think its cool they didnt put hops in it, it lets the fruit stand out more than it otherwise might, here very fragrant and interesting, with a fleshy sort of sweetness, creamy tasting, green skin flavor like a ripe pear has, and some residual sweet. an interesting and tasty and kind of simple beer here, wholly original, but as a glass of beer to drink, it was one of the least moving that we had here, although others in our group liked it more than i did. curious flavors here...
