Bottle-conditioned sour ale brewed without hops. Made with grain from our friends at Sugar Creek Malt and re-fermented with pressed juice from Southern Illinois apples. Aged for a year in puncheons that previously held red wine.

Pale bright yellow with a compact layer of white foam, some spotty lace and visible rising carb trails.
Mildly acidic apple aroma, crabapple, malic acid. Not much barrel or funk in the aroma.
Taste is puckering and moderately tart, verging on sour. Sharp apple and crabapple acidity, some light woody barrel traces in the aftertaste. Not much malt presence. Light feel, fairly crisp and clean. Effervescent carb level with a bone dry aftertaste.
This was good, but the price was fairly ridiculous. At $23 for a 500mL, it's not really unique enough to justify the high price. Especially when a very similar (barrel-aged) Basque sidra is available, $9 for a 750mL shipped from Spain.
