The first in a series of beers brewed to capture the essence of a particular tree. This amber beer was brewed with white oak leaves and rested on toasted oak heart wood and acorns that fermented on our shelves for two years. Primary fermentation with our house mixed culture and then finished with a wild-captured strain to drive the beer bone dry with a lightly tart finish. Caramel and toasted bread notes from the malt create a backbone for classic oak character: tannin, leather, stone fruit, bourbon, and madeira; and the oak lends a surprising amount of body considering there is no residual sugar in this beer.

Autumn in a glass, in the most literal sense. Toasted oak wood and leaves, nutty, malty, and woody with a light tartness and clean dry finish. Tawny amber tone, saturated color with good clarity and a finger of creamy tan foam. Light bodied, ample carb, supple feel. Overall this is a nice expression of the oak ingredients, the woodsmoke and tartness reminds me slightly of a Grätzer, but it’s entirely a unique beer on it’s own. Thanks to Bill for this one!
