A pilsner as only Scratch can brew, made entirely with local malt and Illinois-grown hops, then brewed over a wood fire in our copper kettle. This beer has a grain character expressive of our region with Sugar Creek Malt's second to none pilsner and a spicy noble hop-like character from Hallowed Hop Farm's Crystal hops. Direct fire brewing in our copper kettle adds a unique kettle caramelization unlike any other, adding body and a touch of a caramel. Fermented with lager yeast for a crisp, clean finish.

Local malts and hops truly make the difference in this beer....the star of the lineup of beers I had yesterday... this is brewed in a big copper kettle and it really imparts a toasty sweetness not found in others...

Crisp and delicious... I could drink this over and over..

On draft. Poured out a clear, straw-yellow color with a small, white head of bubbly foam. It left minimal lacing on the glass. It smelled of caramel, grains, toffee and hay. Sweet toasted bread taste with caramel and a mild citrusy bitterness. Crisp and smooth finish.
