Pale gold, racing carb streams, two fingers of foam that slowly dwindles away. Bright clarity at first, becomes slightly cloudy over time.
Aroma is mellow, mild lactobacillus, doughy and grainy. More hop presence needed for a dry-hopped beer.
Savory herbal character and light ginger from the sassafrass, tart lacto, dry finish. Mild herbal hop but little if any perceptible bitterness. Maybe a little phenolic. Light bodied and spritzy. Overall it’s pretty good, though not quite as good as Spring Tonic in a similar vein.
