Brewers notes:
Named after the Latin for “Sugar Maple,” this beer is brewed entirely with maple sap in place of water, from trees harvested in southern Illinois. This beer is dark and malty, with cherry and fruit esters and a light smokiness the result of being brewed over a fire and adding several pieces of hot granite to the boil.
Served on draft at the Green Lady during the South of 80 event.

Dark brown opaque body, thin layer of off white foam on the surface that deposits some minor spotty flecks around the edges, but not much lace due to the higher abv. Coverage is okay, but the skim parts across the surface after a few sips.
Aroma is malty and dense, slightly earthy from the maple, though a little muted.
Taste is rich and malty, earthy with mild bitterness and vague well-blended sweetness. Some deeper maple notes, but it's more natural and much less sweet than reduced maple syrup. Full bodied and dense with a moderate level of carbonation. This wasn't as drinkable as the arugula rye porter, but it certainly was a unique beer that was fun to try.
For downstate IL maple beers, i'll have to give the nod to Abe's Ale from Rolling Meadows.
