Our fall Adaptation Ale is a fresh hop harvest IPA brewed with wet Mosaic hops that went from the hop bine to the kettle in 24 hours. We brewed a very light American Style IPA as the base to let the Mosaic really shine. 4lbs per barrel of fresh hops, plus additional for dry hopping...this is an all out expression of the Mosaic Hop.

This is probably the best IPA I have drank that was brewed in Oklahoma. Very floral and fruity on the nose with really good balance and bitterness control on the backend.

Pours from the can a pale orange, crystal clear, with a healthy finger of white head. The aroma really does smell of grapefruit peel, oranges and spruce. The taste follows the smell. It's so tropical and citrusy. Grapefruit, mango, orange and evergreen. Nice bitterness. The mouth is medium-light. This is so easy-drinking and flavorful.

Looks good with a pale, yellow-orange body and a strong, tall off-white froth.

A deep musty hop and light fruit aroma precedes a flavor profile full of earthy, musty hops, orange, grapefruit, orange peel, and a hint of grain.

Lighter in body than most of its kind and has a relatively dry finish.

A unique Okie IPA that shows off the Mosaic hops just as advertised.

appearance- Dark golden in color and a two inch fluffy head.

aroma- Very strong hop aroma that is apparent as soon as the canned is opened. Not much in the way of malts as the mosaics hops dominate with pineapple, mango, and citrus.

taste- Pretty the same as the aroma with pineapple big upfront followed by a little bit up pungency and mango fruit flavors. A bready malt is evident especially as this warms up, but its perfect for letting the mosaic hops shine. With that said a little bit of malt sweetness might help this beer out because it is really dry and malt verges on being bland.

feel- Medium bodied, medium carbonation, and a clean finish.

overall- Great use of mosaic in a wet hopped ipa. I felt a little more malt sweetness would have added some balance and taken this to the next level. That being said its still a great beer and worth purchasing again.
