Poured into a Gulden Draak tulip. Pours a light to medium golden amber with a fine, two finger white head with great retention and solid lacing. Aroma of lightly grainy saison yeast, pear, faint citrus and a hint of graham cracker. Flavor starts with dry saison malt, lemon rind, apple and transitions into a dry, very champagne like finish, although bretty and more tart. Grapefruit and champagne yeast in the finish. Medium bodied with sharp carbonation. Overdue to try this style; this is a locally brewed one. The champagne yeast really shows its character here. The flavor starts like a less grainy, but lightly tart style of saison, but the finish is remarkably similar to a sparkling white wine or champagne, although it is notably mare tart. The lingering tartness and brett in the finish is not a flavor I favor, but I have to admire the interesting resulting ale that very much tastes like a hybrid between a saison and classic dry champagne. I would think that those who favor sour beer would really enjoy trying this, although the sourness is in the moderate range. Interesting.
