Cold IPA is an IPA fermented with lager yeast but fermented at a higher temperature (60 instead of 50) like ales are. So technically a lager, but we like to think of it more as a hybrid style than anything else and still call it an IPA! It was hopped very similarly to our West Coast IPAs, just a little less calculated bitterness. Often confused with IPL (india pale lager) which is a lager hopped like an IPA, they are quite similar but we brewed and treated Outshine as if it were an IPA just with a different yeast strain. We're not trying to make a lager that tastes like an IPA, but an IPA that is cleaner, lighter, with less fruit character.
Cold IPA is dry and crisp because of the highly effective lager yeast and the use of rice in the grain bill. It is lighter in body and has less fruity esters than a West Coast or Hazy IPA does. It was also brewed with just over 20% rice to create a lighter body. This allows us to produce this beer quickly. We were able to brew and package this beer in 3 weeks whereas our lagers are packaged between 6-8 weeks after brewing.
