Tsujigiric "crossroads killing" describes the impulsive act of a Samurai testing out his new sword on a random individual or passer-by. Not far removed from an "impulse brew", this is not your everyday IPA but can be drunk like one.
Conceived by the BrewDog Shepherds Bush GM and a couple of our brewers, the idea was a fresh Japanese inspired IPA, fermented with sake yeast and yuzu. We brided the citrus character of the yuzu with the lemon sherbet quality of one of our favorite hops, Sorachi Ace, which originated from Japan. It also includes Chinook to complement the spice of the sake yeast. Sipping on the beer you get the IPA bitterness through the tangy lemon and fresh herbs, rounding off refreshing and balanced.

• Look – 4.25 – Very light straw color, like a golden ale. Nice initial head followed by a light dusting that stayed for the duration.
• Smell – 4.25 – Fresh and sweet.
• Taste – 4.5 – Fantastic light fresh taste. Limited bitterness and nice light maltiness. There’s some kind of taste going on here that I can’t pinpoint – medicine, Belgian spice like coriander, cracker in the malt – not quite sure but I like it.
• Feel – 4.25 – Light to medium mouthfeel, very smooth, but might be slightly over-carbonated.
• Overall – 4.5 – Really decent beer, would definitely drink again. Not sure if I agree with this being an IPA thought, it’s maltier and less bitter – not sure what style category I’d put it in.

• Taste – 4.5 – Fantastic light fresh taste. Limited bitterness and nice light maltiness. There’s some kind of taste going on here that I can’t pinpoint – medicine, Belgian spice like coriander, cracker in the malt – not quite sure but I like it.

Good floccuation means this pours almost pristinely clear, a pale gold with a fine, fairly long-lasting white head. Smells primarily of Sorachi Ace, with its signature dill and chamomile aroma, plus a bit of cheesiness and a good dollop of coconut cream. Save for a very faint background note of pine, the yuzu is almost completely obscured by the Sorachi Ace - and this is the third UK beer I've had where this is the case. Maybe stop using Sorachi Ace with yuzu? Or maybe use enough yuzu to actually poke through the hop clouds? The label also boasts 'sake yeast,' but of course any subtleties this might bring to the beer are also overpowered by the hops. The most I can detect of it is a slight mushroomy quality.

Some bitter orange liqueur is present, including some of the alcoholic warmth that implies - which shouldn't really be there at only 6.2%. I do love Weird Beard and so I am a little unhappy to say that this is the first dud I've had from them. Possible food pairings: creme caramel, manchego, tapas in general, roast pork with plenty of fat, fondue.
