We took our Gose, aged it on fresh organic grapefruit, and then dry hopped it with Citra hops. For Batch 1 of The Wind, we re-fermented the beer with Brettanomyces. The resulting beer is incredibly complex, funky, and delicious. Please take note, we will be producing bottles of The Wind on a semi regular basis going forward, however we will not be incorporating Brettanomyces again. So, this batch is a rare opportunity to see the complexities that Brettanomyces imparts to an already wonderful beer. The Wind, Batch 1, has been cellaring for 6 months and is full of flavor.

First off, controlling the head on the pour of the Brett beer was a bit of a challenge. The white soapy-turning cotton candy light topping dropped in time, but didn't disappear, leaving a loose array of medium sized bubbles covering the surface.
The Wind Bretta has a bright, fresh aroma with grapefruit and Brett jumping from the surface of the beer. The scents are clean - and I mean they actually have a non-astringent cleanser aspect to them - almost like the aroma you get going into the indoor pool at your gym. I'm thinking it's some mix of the hops mixing with the salt and Brett, and is oddly enticing.
That note does make it into the taste, but it isn't as strong. It is less desirable there, however, and I am glad it is pretty light. I am also glad the other flavors dominate it. These include a light grain opening flavor that is scrubbed away quickly by moderately aggressive carbonation. Grapefruit rind joins some dusty attic notes flavors before the acidity starts its crescendo. Carbonation continues to needle my as this fades slowly, reverting back to grapefruit pith and some light grains.
The Wind seems to bring to the table what the bottle says - grapefruit (especially noted on a light burp), some hop bitterness, and definitely the Brett. The salinity seems to get spread a little thin, and the coriander seems absent to me. That said, The Wind is an interesting and a enjoyable beer

-pale, cloudy pour from corked bottle. 2 cm of foam quickly dissipated. This smells like grapefruit juice. The astringency is low and the Brett funk-factor is just detectable. The finish is very dry. This was good after a run on a hot day. I would enjoy many Windy afternoons if I had more.

This Beer poured out as a slightly hazy golden yellow color with a fizzy white head on top. The smell of the beer has some funk going on along with a good amount of hops on the nose. The taste has a good tartness to it with a decent hop profile kind of tossing in some attitude near the finish. The feel of the beer is light bodied, pretty refreshing. Overall it's a good take on the Gose style.
