Yesterday's Tomorrow is our house Saison aged in oak wine foudres with plums.

Bottle conditioned with Brettanomyces.
Serving Temp: 48-52 deg.
Ideal within 2 years.

Appearance: Pours a slightly hazy golden color with a billowing three finger head; clumpy lacing

Smell: Plum aromatics break through the spicy yeast and leathery Brett tones

Taste: Sweet plum flavors forward with spicy yeast emerging; the mid-palate features the funk and leathery Brett aspect but the back end is tart with a slightly bitter finish

Mouthfeel: Light to Medium body but slightly overcarbonated

Overall: The combination of the plum with the Saison and Brett is very creative despite the unusual mouthfeel from the overcarbonation

Very well balanced sour beer with a taste of plums. Has a nice white head with a great balance of sweetness and tart. I likes this beer the best within the Yesterday's tomorrow series.

Bottled last summer.
Gentle pour yields a one inch fluffy white head over an ever so slightly hazy, not quite bright, body with some sticky lacing. Nose of funk and plum with a nice little bit of minerality as well. Taste of plums with a tad citrus flavor. There is a slight sweetness up until a nice, tart finish. Wow, what a beautiful, well-balanced beer we have here! Wonderfully full mouthfeel and overall, I highly recommend this to any and all sour beer aficionados. Cheers to the boys up in Morrisville, VT for another fine job!
