Notes:
Pronounced “cheeks-ahh-lubb,” Chicxulub is named after the impact crater of the colossal asteroid that smashed into our planet approximately 66 million years ago marking the Cretaceous-Paleogene boundary. The fallout of this event disrupted the climate to the point that 75% of the plant and animal species on the planet went extinct including, most notably, the dinosaurs. Our less deadly Chicxulub is a small batch variant of DinoS'mores aged with an abundance of cocoa nibs and Guajillo, Ancho, and Cayenne peppers. Dazzling notes of Mexican Hot Chocolate, brownie batter, and toffee flash through the night sky with a brief scorch of heat. (Cheers to our alumni, Kirk and Damian, who developed the first iteration back in 2019!)

Dark brownish black, thin layer of mocha foam that ebbs away quickly.
Chocolatey aroma with some toasted chile notes.
Chiles, chocolate, and molasses notes, dry with some heat that builds lightly.
Creamy texture, lighter than expected, medium bodied.
A pleasant Mexican hot chocolate style imperial stout.

This is a fine effort from Off Color...
I don't know that it matches up to the big hitters in the group.
Abraxas squashes this with its thickness and complexity..but...this is a tasty beer..
I would definitely buy this one again. All of the key players are present and accounted for.
It's not quite as thick as others in this genre but it is very tasty.
I am not disappointed at all.

750ml bottle, 2019 vintage, poured into a stemless wine glass.
The beer pours a very dark jet black color, somewhat thin with a fizzy tan head, hardly a fingers worth that has no retention and offers no lacing. The aroma is okay, lots of chile peppers, earthy, spicy, and roasty though it doesn't become vegetal, with a nice layer of fudge and brownie batter chocolate, toasted graham cracker, roasted grain, a touch of vanilla marshmallow and fusel alcohol. The flavors are good, lots of chocolate and pepper, quite spicy with a building heat as it warms, roasted grain and toasted graham cracker leads to a marshmallow and booze finish. The mouthfeel is decent, a bit thinner than I'd like, lively and coating though with a very spicy and dry finish.
Verdict: A pretty decent chile pepper stout from Off Color. As far as this style of stout goes, this one is certainly on the spicier side and is less balanced. There is certainly some nice chocolate and graham cracker character that really is evocative of Dino Smores but on the whole, this beer steers too far into the pepper space.

16oz can. Poured out an opaque, jet-black color with a small, light brown head foam. It left minimal lacing on the glass. It smelled of chilies, chocolate, toffee and roasted malt. Nice spicy taste with chocolate, roasted malt and toffee. Crisp, sharp and smooth.
