Notes:
American Wild Ale fermented in our Barolo foedre for 9 months then racked to a hand selected Makers Mark bourbon barrel picked by the dapper squirrels at Cherry Circle Room (in the Chicago Athletic Assoc. Hotel). Aged two more years in barrel followed by cold conditioned for over six months in stainless before bottling. Doing the math, you may note we’ve been working on this beer for about as long as Mousetrap has been open.

Over 3 years in the making, and the resulting complexity really shows through nicely.
Deeply saturated orange tone with pale canary yellow edges. Highly effervescent and charged up with rising champagne trails. Two fingers of foam, head lasts for a couple sips then breaks partially. Minor bits of irregular lacing here and there. Clarity level is moderate, there’s a slight haze.
Aroma is really nice, juicy tangerine and oak, as it warms up, hints of candied oranges and brandy-soaked peaches. The barrel is really on display, with caramelized sugars, vanilla, and toasted oak staves.
Tart and juicy citrus notes of lemon and tangerine, also peach pits, tropical lychee, apple and some woody oak in the dry aftertaste. Hints of Brett in the periphery. Really nice mix of flavors here, balanced acidity, engaging complexity. Makers isn’t noticeable really but surely dovetails with the fruity flavor profile, adding vanilla and toasted oak.
Medium bodied with ample carbonation, lasting foam, spritzy feel, somewhat crisp with a creamy texture in the middle, and a dry finish. Overall it was worth all the time and effort for sure. One of their best Wild Ales yet.
