oedre-aged Wild Ale.
We took a former Side Project barrel that Cory made some beer with raspberries in years ago, then we made a batch of Procatstination in it, then we filled it a 3rd time, tasted it 9 months later and knew we had to cuvee it. So here we are four years later with three separate beers now run through the barrel as it’s still putting off a twinge of raspberry character. Blush has impressions of white cake, mango, and raspberry seed over a background chorus of perfume and mild, Missouri oak. Velveteen body with restrained acidity, notes of almond, nectarine and something tropical and vanilla custard like...rambutan or perhaps paw paw. Finishes tannic and bone dry with a delicate, delectable twinge of residual raspberry. Not jammy; more a distilled essence.
