Garamond is a play on the Piquette technique and style of farmhouse wines using a low gravity, native fermented wit beer from one of our Barolo foedres instead of water to soak several hundred pounds of Frontenac Gris grape pomace prior to pressing the grapes a second time.

Pinkish gold, the wine grape is noticeable in it’s color. Compact finger width of foam, it eventually breaks across the surface with a calm stillness.
Aroma is unique and intriguing. Fruit spice and cherry, raspberry, even watermelon. Maybe a little dry woodiness.
Taste is tart and juicy with a lot of fruit, the Frontenac Gris grapes come through with a blend of white & red characteristics. Red skin with a lot of berry and tannins, white grape flesh with some bright stonefruit. Really unique, maybe slightly less defined than the aroma.
Medium bodied, tart and spritzy, easy to drink. Complex enough to contemplate. Overall it’s really nice, and a cool collab with Speciation/Native Species. I’ve enjoyed their wines and wild ales alike.
