Paisley is a gin barrel aged wild ale that throws a nod to the Aviation. A classic gin cocktail balancing subtle sweetness, citrus, and floral characteristics which set the stage for the complexity of modern gins to shine. Sudachi (a fanciful Asian citrus fruit similar to yuzu but with a spicier, herbal kick) stands in for the prototypical lemon while white tea provides a perfumed flower note. Instead of Crème de violette, a relatively esoteric liqueur made from violet flowers, a small amount of butterfly peashoot flowers react with the acidity of the beer to give a soft, violet sheen reminiscent of the sky at dusk.
