Extra hoppy ale brewed with Brettanomyces. Collaboration with Brasserie de la Senne using a traditional Belgian style mashing regiment.

Pale gold, becoming opaque as it’s poured. Huge billowing head and sudsy lace.
Soft florals, white pepper, almost a saison yeast character, Brett is subltle in the nose.
Taste is Brett forward, yeast is assertive with a lot of botanicals, and cut hay. Earthy and grassy hop character, a firm bitterness lingers.
Airy and effervescent, bracing hoppy bitterness, zesty and crisp feel.
Overall this is really great. It harkens back to the freshest Taras Boulba I had in my life, years ago at Au Laboureur in Brussels. Topped with the best elements of aged Orval. A winner.
