Our first ever doppelbock lager (how is that possible?) features a wall of richness built out of bricks of sweet malt and mortar of rosy booze mixed with dark stone fruits. Step mashing creates a lager that is simultaneously full, boozy, and smooth, requiring care while consuming lest you find yourself fainted with hooves in the air.
Ingredients: Pilsner and Munich Malt, Nugget and Hallertau hops

Appearance - The beer was a dark copper color with a generous fluffy white head.
Smell - The nose had notes of dry dark bread.
Taste - The profile was bitter for the style. It had notes of char-like qualities. The finish was dry and moderately bitter. Sweetness was not part of the profile.
Mouthfeel - The body was bubbly with a medium body.
Overall - The is one of my favorite styles. This is not a prime example.

2/28/26 - (Can - Home) (Chicago, IL) - Can Notes: Purchased a single 12 oz can at store temperature from Beer on the Wall on February 5, 2026 for $2.84. Refrigerated upon returning home until this morning. No can date, but distributed during the week ended February 6th. 9.0% ABV. Doppelbock Style Lager, High Gravity. Malts Munich and Pils. Hops: Nugget, Hallertau. Secret Ingredient: Step Mashing. Brewed and canned by Off Color Brewing, Chicago, Illinois.
Appearance: Poured a little over half the 12 oz can into a tall tulip glass. Dark caramel bronze murky base, sustained mild carbonation after the initial burst. Generous puffy tan white head lingers a few minutes before leaving significant clumpy lacing and a creamy root beer like tall thick creamy cover over the base. 4.5
Aroma: Toffee, caramel, cinnamon bread. Mild strength, slightly higher enjoyment. 3.75
Taste: Caramel with pound cake, light mineral water and grassy notes. Enjoying. 4.0
Mouthfeel: Gentle persistent carbonation, malty and a bit creamy. Drinks lighter than the 9%, but perhaps that is the result of drinking double digit ABVs clearing my cellar the past two months. Enough hops to keep things honest, but definitely malty with sweetness winning out, consistent with style expectations. Caramel sweet pound cake finish. 4.25
Overall: This is a solid offering, enjoying more than typically malty lagers. This hits the spot on a cold late evening / early morning. Thanks as usual Off Color! 4.0

Golden brown with a frothy tan head. Toffee and caramel on the nose. Taste is pretty much the same with a kind of spicy finish. ABV is well hidden. Medium body.
This is a solid beer, but other than the 9% ABV, it seems more like a bock than a doppelbock.
