The dark berry and green herb of Mosaic hops and the candied citrus character of El Dorado wouldn't need any help on their own. But in the capable hands of Hi-Wire, the calculated additions of mango and apricot only bring out a little more of the hop character than what was there already.
Pale and hazy gold, their seventh rendition of Hop Circus highlights the crazy nature of beer, leading with a blooming citrus and tropical display with the delicacy of peach and parsley in the background. Soft sweetness starts the show with hints of caramel, agave and honeysuckle for a malty draw of attention.
As the ale journeys to center palate, the malt influence fades and the hops hit a crescendo with the juicy taste of mango, apricot, pineapple, orange, light grapefruit, passionfruit and lime. As hints of berry, sherbet and white wine ebb and flow from the recess of taste, the flavors develop into a smooth, clean and herbal bow of citronella, hemp and gin.
Finishing smoothly bitter and with a gentle hop and heated spice, a medium length aftertaste of gin, tea, botanicals and fresh cedar in a nearly error-free and moderate tasting session.
