Letting the ampersands reign down once more, Hi-Wire Brewing introduces the hops of Idoah 7 and Eldorado for a candied and green combination.
Light golden and held in a firm but reasonably haze, this Idoho 7 and El Dorado version of Hazy&Juicy&Hoppy&Fresh rolls a fresh herbal, vinous fruit and berry-like scent from its plush ivory head. A light pastry sweetness carries a mild cereal grain taste with hints of honeysuckle and agave onto the early palate.
But once on the middle, its malt influence quickly transitions to hop flavor for a bright, nearly tangy but highly herbal agreement. Green berries, lime, white grapefruit, gooseberry, kiwi and lemon verbena start to make a transition into an herbal late palate. But first, its the candied fruit nature of El Dorado hops that bridge the agave and honeysuckle sweetness through the fruit display and into a balance for an herbal array of parsley, mint, cedar and hemp.
Medium bodied but registering somewhat lighter and drier side because of the tangy nature of the hop acidity. It finishes herbal, spicy and with strong matcha flavors, leading to a pleasantly grassy, moderately bitter aftertaste, that's less extensive than the herbal grip of West Coast varieties .
