Poured into a Gulden Draak tulip. Pours a dark, port-like reddish brown with a fine three finger off white head with good retention and lots of pillowy lacing. Aroma of pine, caramel malt and a hint of cinnamon, somewhat estery. Flavor is saison yeast, a hint of brown sugar, bitter herbs, resiny pine, and raw pine wood bitterness. Finishes with light cinnamon, earthy with lingering dry, resiny pine. Light to medium bodied. An interesting evergreen forward winter ale, the structure is most like a semi-dry saison, but with the dominant pine esters and a hint of bitter holiday herbs; cinnamon and allspice. Rather dry and almost astringent finish. Someone in the distant past in the far north must have brewed up something like this from local ingredients.
