Dry-Hopped Pale with lemon balm.
Pours a glowing golden straw hue with a soft haze and a frothy head from the additions of flaked wheat.. Aromas of bright candied lemon and tropical fruit. Tastes of citrus fruit, mango, mint and fresh bread. Finishes dry and crisp with lingering notes of tropical fruit and fresh cut grass.

i am loving that these guys are canning now, the few ive had have been splendid, and this one is too. its a lemon balm pale, hazy and funky, even lightly bretty to me, rustic either way, fermentation forward, and i almost wonder if the lemon balm fills in for hops, because its botanical and bitter and lightly grassy and citrusy, but its more lemon balm than hops, very clever usage here either instead of, or adjacent to very compatible, even similar hops, way cool. its surprisingly dense and hazy for what it is, real pale, whitewashed looking, not chunky or anything, but not delicate, despite the tall airy and lasting creamy white head it holds. nose and taste of light grassiness, meyer lemon, and honeysuckle, with some starchy white wheat, even raw wheat underneath, its springy and blooming, very dry, and with some farmhouse yeast to it, old worldy in that way, not overly refined but the intangibles are there. musty basement, hot hayloft in summer, wet animal, newish brett to me, some belgian and estery saison tones to the ferment as well. nice herbal bitterness late, dry for how grainy it is in the middle, and effervescent enough to really lighten it up. impressive overall quality, unique recipe, cool use of the lemon balm, its not over the top, its well inegrated here, it belongs. this is as much saison as pale to me, a cool style hybrid. fantastic and inspired!
