Cognac foeder-aged saison brettanomyces.
Bright citrus nose, aromas of damp oak, lemon rind and wet hay. Golden straw hue with tastes of candied citrus fruit, tangerine, lemon, melon and honey. Creamy and earthy with moderate tartness and acidity, finishing with a smooth rustic dry linger.

cognac aged saison here with multiple brett strains, 2022 vintage and drinking at peak right now i think, clearish through much of the bottle, patchy white head, better carbonated than the salmonberry we had right before it but still shy of effervescent, tons of funk to this, lemony and sharp too, white winey, with the musky sweet cognac quite subtle but still there, bright and citrusy in its second half, sourer and sourer as it sits, very dynamic and interesting beer, always fun to crack a propolis open. aroma of old brett, musty and cheesy, with some light acetic sharpness there too casting white wine notes and even a bleachy sort of thing, light crackery grain underneath, quite rustic though, very dry to me, a little bit of stone fruit to it, floral like a lot of their beers are, a touch richer with that cognac aspect, but its way back, very light oxidation here as well. the flavor is equally curious, bretty but odd with all the pucker, some white wine fruitiness, the cognac way back, cedar closet, old mans hat, wet dog, white pepper and coriander adding a belgian ester, white tea and yellow florals, medicinal late, odd but also oddly addicting at the same time, light body but with grain flavor, clover or something springy at the end too. i didnt totally love this, i didnt totally love the salmonberry one either, these guys make weird beer that sometimes is more intriguing than it is compelling, but im here for it. this is well aged now, truly unique on the ferment, and a fun one to share with the crew!
