light golden color, moderate head. smell of a light crisp saison...definitely very herbal and earthy on the nose. taste is very drinkable, lighter saison notes and more of the same earthy vibe. not too strong but quite tasty. good.

09/13 bottle. Poured into straight pint glass. Poured a lightly hazy golden yellow color with a tall, fluffy white head that took a minute to settle to a thin cap which had excellent retention. There was just very light lacing.
The aroma had a nice herbal scent, and there was a good yeast aspect as well. The malt, while nicely grainy, was very subdued, and any hops were blended in with the herbal and yeast tones. The taste was pretty similar, with the grains being a bit more noticeable. There was a slight Belgian-y yeast taste at the back of the tongue.
The body was nicely full and smooth (except for a touch of yeasty spice on the finish), without being heavy or sticky, Drinkability was very good, I went through the 750 before I really realized it. Overall, a very nice brew from one of Washington's newer brewers. Certainly worth trying if you see it.

Poured into a 3 Monts tulip. Pours a light golden amber with a huge three finger white head with good retention and sheets of lacing. Nice herbal aroma with distinct sage, honey, sweet malt and light wheat beer spicing. Flavor is earthy and delicate with light flavors of sage and thyme, saison yeast, coriander, light sweet malt. Light bodied with active carbonation. Flavors are fairly subdued, but there are plenty of interesting things going on in here. More flavor comes out in the finish, which leaves a pleasant aftertaste of earthy sage and light honey. This was a bit to subtle for me, but makes me hope that they reissue their first ale that was made with sage, I think this profile with more robust flavors would be excellent. For me, this had more a saison profile, although the honey and light malt do lean towards a light blonde ale.

Full Disclosure: The brewery does not define the style but it seems to most resemble an American Blonde in large part because of the vagueness of the category. Has aspects of Bohemian pilsners and witbiers or even a hefeweizen. It does appear to be filtered, though.
Appearance- Served with about two to three fingers worth of head that has some retention. The head is pure cotton white while the body is a slightly hazy, light amber blended with golden straw which glows a hazy and inviting light orange when held up to the light. Some lacing is left behind and there is a constant stream of bubbles rising to the surface. Very nice looking beer.
Nose- Lots of complexity paired with delicacy. Honey and nectar. Light hints of melon. Some caramel with a hint of mustiness. Lots of phenols. This makes me think of it in terms of a witbier. Lots of spice. Banana, clove, and orange peel. Coriander.
Taste- After some time warming, it reveals itself as a mix between a pilsner and witbier. Exquisite spice which is reflective of the nose: clove, coriander, nice, rounded phenolic aspects. This beer is both well integrated and balanced. Mild earth and spice from the noble hops. They also had a herbal character that is bolstered by the sage and thyme. The abundance of herbs gives this beer a medicinal quality which is actually quite pleasant. The finishing spices tickle the tongue and match well with the carbonation.
Mouthfeel- Light bodied with a good amount of carbonation. Remarkably smooth for such a light bodied beer. It has a dry finish which aids the integrity of the texture.
Drinkability- Very easygoing. Perfect for a summer day. The incredible balance renders this beer quite mellow. But it still has enough complexity to keep my pallet intrigued. The only negative is that it was 6 bucks for a pint. Still better than the usual 15 bucks for their 750 mL bottles.
Overall- Solid beer. Very good and a must try. I look forward to trying more of Propolis' offerings. I will wait for them to appear on draft, though.
