The Down with the Pastryarchy Strawberry Cake Stout variant is a swirl of strawberry, vanilla, and chocolate. Neapolitan layers wash across the palate in cascading waves, sweet additions balanced by the malty roasty canvas of the base stout.

Appearance: Deep amber in color, crowned by a large, dense, fine-beaded dark tan head, with superior retention. Fine rings of foam ring the glass walls, quite unlike any I have ever seen, resembling a dusting of brown sugar granules.

Aroma: Strong notes of vanilla, semisweet chocolate and bitter cocoa dominate the aroma, with a pronounced undercurrent of strawberry jam. It is really quite amazing, like stout cake drizzled with strawberry preserves. there is also a strong wood note, perhaps of oak. Modest notes of sweet alcohol are also noted, in this dazzlingly complex aroma.

Taste: The taste begins with a wave of bittersweet chocolate and strawberry jam, and a hint of chalk. As it progresses, notes of bitter cocoa ascend, dominating the taste. Later, the strawberry jam, mixed with slightly spicy alcohol takes center stage. The relatively high ABV presents with a modest warmth and a slight spiciness. The taste draws to a close with a duel of bitter cocoa and some moderate herbal hops; both of these linger on and on.

Mouth feel: Smooth and full, with slightly zesty carbonation, and just a hint of chalk, something I cannot recall ever experiencing in a beer.

Drinkability/notes: An absolutely remarkable dessert beer, would absolutely pair very well with chocolate cake or brownies, quite the treat.

Presentation: Packaged in a standard twelve-ounce aluminum can, served in a Save the World Brewing teku.
