903’s French Toast Stout aged 14 months in Ironroot Republic barrels. Aged on maple, cinnamon, and nutmeg.

903 Barrel Aged French Toast Stout was aged 14 months in Iron Root Republic whiskey barrels using 903’s earlier French Toast Stout as the base. This is a taproom only release that I managed to pick-up in their Sherman, TX location in mid-May 2021. Drinking it on October 2, 2021 after it had rested in the back of my fridge from the moment it made its way to my home. Served in a 12-oz sniffer glass and given approximately 30 minutes to warm up before really diving into its profile.
Look: Pours a dark brown color with coppery hints. Lots of upfront carbonation leading to a fizzy head that quickly dissipates. There are no fingers on the side of the glass. This beer is high in its ABV but I suppose I was surprised to see it didn’t crack double digits after I scrolled through 5 months of 903 Facebook posts to arrive at the alcohol content (it’s not listed in the bottle for some reason).
Smell: Smells like syrupy, buttery French toast. Very inviting. Makes me want breakfast. The essence lasts from the moment of first pour to the final sip. I thought it was very pleasant; and though I have not much to say about it, one of its finest attributes.
Taste: A little off. Yes, it tastes like syrupy French toast. However, even upon letting it warm up, there’s this almost musty backend flavor that takes away from the upfront sweet tastiness. I assume 903 gets their water for their beer from Lake Texhoma, and the flavor profile of that water is probably a mixture of redneck and mud. I feel like many of the non-slushy 903 beers have this inherent flavor profile. The more I drank this beer, the less I wanted to. Sixteen ounces is a lot, and I can’t help but wonder that storing it in my fridge for four and a half months might have done a slight disservice to this beer’s flavor profile. I probably should have had it upon purchase back in mid-May. With that said, most of the flavor is French toast. French toast is good.
Feel: Shockingly, this is the best part of the beer. While it is thin in its profile, it does have this almost buttery-like consistency that does lend my brain to think I am eating French toast in a glass. With that said, it sure would have been cool had this been thicker.
Overall: A pretty good beer, but one that might have been better under different conditions directly influenced from how I stored it. Given it’s a one-off that can only be obtained from a brewery located at the TX / OK border, and that taste was the lowest scored category by this reviewer, I give it a 3.75 based on its smell and mouthfeel. A good 903 beer.
