Appearance: Pours a very deep brown, opaque to all but the strongest light, where at the stem of the glass, some ruby highlights can be seen. The tan-colored head is moderate and dense with good retention, showing a dense, unbroken sheet of lacing about the glass wall.
Aroma: The aroma presents rich, bitter cocoa, roasted pecans, brown sugar, caramel, vanilla and a strong, but pleasant, bourbon-like alcohol note.
Taste: The taste opens with brown sugar, toasted pecans, bitter cocoa and vanilla. Midway through the taste, bourbon and wood come to the forefront of the taste. An undercurrent of brown sugar and dark caramel carries throughout the taste, but is more notable midway through and on to the close. The close is dominated by vanilla, wood, and a bit of sweet, warming alcohol.
Mouth feel: Full and very soft, velvety to the touch, with just a hint of carbonation.
Drinkability/notes: An excellent, "over-the-top" dessert beer, very-well suited as a dessert pairing for a holiday dinner. In particular, it goes well with "Spec's Maple Pecan Pie", found only in Texas.
Presentation: Packaged in a standard twelve-ounce aluminum can, served in a La Fin du Monde tulip glass.
