We brewed Mimi’s Tabernacle with pure maple syrup, chocolate and oats. Then we infused it with locally roasted coffee beans and aged the finished beer in a Kentucky bourbon barrel. The end result is a rich barrel-aged Breakfast Stout with a smooth bourbon finish. Mimi would love that this bold, expressive beer is named in her memory. Cheers to Mimi!

Ruined by the disproportionately strong oak taste. Nearly black color with a small amount of foam that quickly dissipates. Smells like oak and a hint of maple sweetness. The taste is dominated by the Kentucky barrel. There is a backdrop of sweetness but it doesn’t come together that well. Fairly thick, syrupy feel. Overall it’s a decently made beer but not one that I myself particularly like just because of the flavor profile. But if you like oaky, smooth, dry bourbon stouts by all means give it a try, you will like it.

L- Pours deep black color with frothy tan head and lasting lacing.
S- Sweet bourbon, chocolate, coffee and malty aromas.
T- Just as it smells w/maple syrup sweetness underlying the bourbon, chocolate, coffee and malty notes, lingers well.
F- Lightly carbonated, rich, smooth & creamy. Incredibly drinkable.
O- Another fine effort by Indiana City. This was the March 2016 from the keg at the release party (fine bottle share waiting in line beforehand). I look forward to seeing how my bottles age. I have seen some remark they thought this release needed more barrel time, but unless you were expecting the heat of a Bourbon County Brand or Avery's Tweak or Uncle Jacob, I did not find it so at all.
