Our version is done in the hefeweizen style using a Belgian wheat yeast that produces low phenol levels along with plum, apple, and bubblegum aromas and flavors. We used 50% wheat malt along with German Tettnang hops in the base beer.

Pours a cloudy, golden color. 1/4 inch head of a white color. Great retention and slight lacing. Smells of yeast, sweet malt, slight tart malt, and a hint of hops. Fits the style of a Hefeweizen. Mouth feel is slightly smooth and crisp with an average carbonation level. Tastes of strong yeast, slight wheat, sweet malt, and hint of hops. Overall, strong yeast contribution dominates.
