Pool Bill's Starfruit Sour Saison

a new release from these guys, and while it looks like they have done a starfruit sour before, this imperial version appears to be brand new, a saison base, bacterially tart, but very clean, and with quite a lot of the starfruit character, which is subtle usually, sort of vegetal and astringent as natural fruit with some lemon and some bitterness, and here, its just like that, fully natural and intense, but there is enough acidity here that the starfruit is only short lived. a sturdier wheaty base, bready and cerealy but dry in this form, with good body and fluff. white wine, peach, lemon zest, dried apricot, sliced lime, and a lightly hoppy bitterness that works with the bitter tangy skin of the starfruit, its that authentic! the flavors are delicate here though overall, and i dont think this needs to be as strong as it is, i would have liked to try their original lower abv version, but the amount of starfruit in this is definitely the most i have known in a beer, and i like it a lot in this sour ale context. super impressed with point ybel too, if you are in the area, definitely go check them out in person!
